Module 1 - Introduction to Food Safety

The course begins with a detailed introduction to the main principles of food safety, outlining the obligations of businesses operating within the sector and who ultimately takes responsibility for maintaining appropriate standards.  A brief look at the history of food safety is also included, along with a look at food safety standards in a globalised world.

Module 2 - What is Food Hygiene

Module Two shifts focus to food hygiene, examining what it means to handle food in a hygienic way and discussing the risk associated with poor hygiene.  The potential for hygiene issues to result in food poisoning is also discussed, along with an introduction to the six main steps involved in breaking the ‘food poisoning chain’.

Module 3 - The 4Cs of Food Hygiene

The ‘4Cs’ of food hygiene are presented and discussed in the third module, both individually and as part of a collective whole.  Candidates consider the criticality of effective cleaning, cooking, chilling and cross-contamination prevention at all levels within the food supply chain, along with how to ensure food is heated to the right temperature to be safe for consumption.

Module 4 - Food Handling & Food Storage

A more detailed look at cooking times and temperatures follows in the fourth module, which also brings chilling foods and holding foods at safe temperatures into discussion.  Learners consider the unique requirements of potentially hazardous foods, alongside important guidelines for establishing whether something is spoiled and should not be consumed.

Module 5 - Packaging and Labelling

Module Five takes a look at legislation regarding the clear communication of information on product packaging. The obligations of food businesses to provide a full disclosure of ingredients and potential allergens are discussed, along with the basics of presenting a nutritional declaration and information on how to cook/prepare the product.

Module 6 - Transporting Food Safely

The course concludes with a series of good practice guidelines for transporting food safely.  The risk of cross-contamination during transit is examined, along with the importance of keeping food products at a safe temperature and selecting the appropriate mode of transport in accordance with the consignment.
